		<description>Hey Celeste - this soup is one of my faves too!  A little bit of gastrogeekology - pouring boiling water over the duck or, as my Popo prefers, blanching by plunging in boiling water removes the "soh-soh" smell by cooking out blood and other impurities.  The scum that often rises to the surface is in fact coagulated protein e.g. blood, plasma, marrow etc and not "dirt"!  I used to imagine all those brown bits were poultry pores opening wide and releasing blackheads....ew, ew, EW!!!  SO glad that's not true!!</description>
